Week In Instagram: August 4th - 10th....

August Blogging Challenge: Day 10...

My absolute favorite recipe this summer has been Greek quinoa. I make it at least once a week and Justin and I just eat every last bit of it up every time I make it. It's great for lunch, dinner or even as a snack on the beach. It's filling, delicious, etc.
• 1 Cup Quinoa • 2 Cups Vegetable Stock • Olive Oil •
• Red Onion • Grape Tomatoes • Chick Peas • Feta •
• Baby Spinach • Kalamata Olives • Lemon • Pepper •

1. Bring the two cups of vegetable stock (You can use chicken stock if you'd like) to a boil
2. Add one cup of quinoa to the boiling stock
3. Cook for about fifteen minutes or until the liquid is absorbed
4. While the quinoa is cooking chop the onion, tomatoes and olives & set aside
5. Once the quinoa is cooked put into a container
6. Add baby spinach and stir it in until it wilts
7. Add in chopped red onion, chick peas, olives and tomatoes the juice of one lemon, a tablespoon of olive oil & black pepper to taste
8. Mix everything together and put in the refrigerator to cool down
9. When cooled add in feta
10. Eat cold or leave it out until it is room temperature
11. Enjoy!

Friday's Letters...

Dear I Don't Know Who: What is this song?!?! "Amy" mentioned that her nine-year-old daughter and all of her friends like love this song. Um, I don't understand and I liked Hanson!

Dear "Julia": Are you really embarrassed that you overslept again today? Or are you pretending because our Department Head answered the phone? You weren't embarrassed last Saturday when you overslept and were the only librarian in the department that day leaving our 15-year-old Page by herself for over an hour until "Marie" came in. By my count you've missed over ten hours of work this pay period. In my opinion you should be embarrassed and written up for your actions. Thankfully for you I'm not your supervisor...

Dear Friends: I have over six vacation days left. Lets do something!

Dear Jimmy Fallon, Robin Thicke & The Roots: I love all of you!

Dear Rain: Go away. You're giving me a headache.

Dear Caffeine: Kick in please and help with my headache.

Dear Friends I'm Supposed To Go To Cancun With: Make up your minds about what weekend we're going so I can change my vacation days if necessary. Love you all.

Dear Followers:  As always, you are all amazing. Have a great weekend!

Stuck In My Head: Possum Kingdom...

Despite our twenty-five year age difference "Marie" and I totally listen to the same type of music. And just now we were talking about various 90's alternative rock songs and "Possum Kingdom" by Toadies came up and now it's stuck in my head.

National Book Lovers' Day...

Today is National Book Lovers' Day (Which for some odd reason isn't in my favorite reference book Chase's Calendar of Events) and as a librarian I encourage all of you to pick up a book, relax and get your read on! If you do, take a picture of the book you're reading and e-mail it to me (MissMisfitLibrarian@gmail.com) or tag me to it on Instagram (@MisfitLibrarian).

Have a happy National Book Lovers' Day!

August Blogging Challenge: Day 8...

Today's prompt is... "Beat the heat and share a snow related memory!"
Despite the fact that I'm not the biggest fan of winter or cold weather, I do have excellent memories of snowy days up in Binghamton. This one day in particular is from way back in 2007...
We had all gotten out of our classes to a nice blanket of snow, so we all decided to layer up and start playing in it. We sledded down the little hill behind our building on stolen dining hall trays, built a snow-bearcat (Binghamton's mascot is a bearcat, which is a real thing) that we named Bob Fonzie, had a snowball fight, etc. It was probably the most fun I've had in the snow in years.

So there you have it, my snow memory. Do you guys have any fun or not so fun snow memories?
