Guacamole Recipe From MasterChef Latino Judge Chef Claudia Sandoval

In honor of Cinco de Mayo and the upcoming premiere of the second season of MasterChef Latino on Sunday, May 19th at 7/6 Central on Telemundo, here is judge (And season six winner of MasterChef on Fox) Chef Claudia Sandoval's guacamole recipe from her best-selling cookbook Claudia's Cocina: A Taste of Mexico.


INGREDIENTS - Makes about 3 cups (700 ml)
• 4 Large Hass avocados, ripe
• ½ Cup (90 g) chopped tomato
• ¼ Cup (35 g) minced onion
• 1 Tablespoon minced jalapeño chile
• ¼ Cup (10 g) chopped fresh cilantro leaves
• ½ Teaspoon salt, or to taste
• ¼ Teaspoon freshly ground black pepper, or to taste
• 1 ½ Tablespoons fresh lime juice, or to taste

PREPARATION
Slice the avocados lengthwise around the pit and carefully remove the pit. Using a large spoon, scoop out the avocado flesh and place it in a large bowl. Using the back of a fork, mash the avocado until slightly smooth but still chunky. Mix in the tomato, onion, jalapeño, and cilantro. Add the salt and pepper, followed by the lime juice. Taste and adjust the seasonings. Serve immediately.


NOTES
You can seed and devein the jalapeño to reduce the heat level or omit it completely for people with milder tastes.  The lime juice prevents the guacamole from getting dark quickly. If you are preparing the guacamole in advance, squeeze the lime juice over the guacamole and then mix it in just before serving to keep it from turning dark. Covering your guacamole with plastic wrap will also help to keep its glorious green color.

For those of you that don't feel like chopping all the ingredients, when Justin and I make guacamole we put all of the ingredients but the avocados, salt and pepper in our Ninja Blender and pulse it a couple of times until its a rough chop. Then we mash the avocado with a fork in the Ninja Blender container, add salt and pepper then give it one more mix.

Mexican Food & A Concert | Beyoncé At Citi Field...

After years of waiting, my sister and I finally got to see Beyoncé in concert at Citi Field for her Formation World Tour on Tuesday night. Since we had waited so long to see her perform (In the past we tried to get tickets to her and Jay-Z's On The Run Tour, etc. and failed) we decided to make a half day out of it.

So I met up with her at her apartment in the early afternoon and we headed into Queens to go have Mexican food at Tortilleria Nixtamal before the show.
After our late lunch/early dinner, we drove over to Citi Field and parked near an exit in their extra parking lot with the idea that we'd be able to escape quickly after the concert (The traffic after anything at Citi Field sucks, so I wanted to make leaving as quick and painless as possible).

While in the parking lot we killed time by sipped on spiked strawberry lemonade that I made, ate some snacks and waited out a passing thunderstorm before heading towards the stadium to get in.

Once in the stadium we found our seats and spent a good amount of time laughing at the girls next to us because they bought their tickets online from Justin for more than face value (He got eight tickets during one of the presales and he sold six of them not even twenty minutes after putting them up online for like $100 extra a pop and I almost told them that if they weren't desperate and would have waited for the general public sale or even for them to announce the second concert they wouldn't have paid a premium for their tickets, which where pretty damn good seats) and were complaining about it. Because the tickets say the name of the person who purchased them on them, they were like "This Justin guy is a dick..." Which I obviously texted Justin and he just thought it was the funniest thing ever.

DJ Khaled came on with a bunch of special guests including; French Montana, TI, Fabolous, Busta Rhymes, Fat Joe, Remy Ma, Movado, etc.

Beyoncé came out and just brought it.

Unfortunately we didn't see the last three songs of the set because it was almost midnight and we didn't wanna get stuck in the after concert traffic. But we still had a great time despite not staying till the end.

Overall it was an awesome concert, the only thing that sucked was the amount of time we spent waiting. But aside from that we had the best time. Neither of us had ever been to a concert before where everyone was just dancing the whole time (We typically go to rock/alternative concerts), so it was so much fun. I can't wait to go to another concert like this.

Fat Kid | Not So Grand Fiesta...

If you saw my Doodlegraph post from about two weeks ago, you know my friends and I were planning a huge Mexican themed Fat Kid celebrate. Well that celebration was supposed to take placed this past weekend and boy did things fall apart.

Three of my friends got sick, one so badly that they are currently in the hospital. One's mother told them out of the blue that they needed to attend a family party that day. One's job decided that they needed to stay because an inspector was coming, so that meant that person and their significant other weren't coming. Another one got held up, so on and so forth...

So yeah, our big epic kid-less booze-filled fiesta turned into a way smaller gathering, with children.

I mean, we still had a blast those of us that actually attended (Because there was no way in hell we were cancelling because we bought and prepped food, etc.) but it was just so sad because we spent all this money buying decorations and props. So hopefully we can have a do over in the near future when people are feeling better and hopefully weird things don't pop up.
But yeah the handful of us that did attend did as we normally do during Fat Kid; ate too much, drank too much and had way too much food left over because we always make more food than we should. So we had a great day but it wasn't exactly the day we had planned and we missed the people who couldn't be there.

I feel so bad for my sick friends, especially the one currently hospitalized because they were so looking forward to this Fat Kid. Hopefully everyone gets better soon, especially since we planned another boozy brunch in New York City in a few weeks.

8:00PM - Fish and chips that weren't that good and took forever to get.

9:00PM - H (Yes, that is her actual name) & Phil playing video games as we wait to get seats.

Visiting Friends...

Since the hurricane a lot of my friends have become displaced because of all of the damage done to their houses and apartments, so Erin and I have been going around for the past couple of days and visiting some of them.

On Monday after some shopping we stopped by Nicole's new place to see her and baby Jack. We helped her with somethings around the house and just caught up. It was nice hanging out with mama and baby for a few hours, especially since I haven't seen Jack in a while. The place they are staying in is relatively close to Justin's apartment so I'll be going to visit them often.

Yesterday we drove into Queens to see our friend (The one that moved to Raleigh and then back) and her daughter. We picked her daughter up from school with her, took them to Tortilleria Nixtamal for some amazing tacos (Which was an adventure all in itself because I had to drive from Richmond Hill to Corona and I hate driving in the boroughs) and then we went back to her new unfurnished apartment where we talked, played hide & go seek in the dark, etc.
I'm really glad we got to go visit peoples. It kinda makes things feel normal and it's nice to see people picking themselves back up and trying to start again even if it isn't where we're all from.

Tacos, Catch & The Mets...

Today was another one of those day I spent at Citi Field with Justin watching the Mets, but it was slightly different than the way we normally go about a baseball game day. Since the game didn't start until 4:10pm, Justin and I decided that we'd head into Queens early to pick up tickets and have lunch at Tortilleria Nixtamal. We had ourselves a little Mexican feast and then we headed over to the creepy parking lot across from Citi Field, where we had a couple of drinks and played catch. Yup, my boyfriend and I play catch. We always have our baseball gloves (Yes, I have a baseball glove) in the trunk of his car, so we had funny showing up the other dudes playing catch in the parking lot.

Eventually we went into the ball park and watched the game, but I really enjoyed the pregameness more. It was just a fun little day out with my love.

Cemeteries & Tacos...

Erin and I went on a mini cemetery hunt in Queens today, so after wandering around looking at headstones we headed over to Tortilleria Nixtamal to have lunch. I found out about the place on Forkly a few weeks back, but apparently it was featured on Diners, Drive-Ins & Dives recently.

Seeing as it was featured on Diners, Drive-Ins & Dives and it is my second Triple D restaurant (My favorite Cuban restaurant in Queen was featured on the show a few months ago) that I've been to I decided I needed a sweet little logo in case I end up eating at another place featured on the show (I have also been to places featured on Man v. Food & Sugar High).

Everything was so yummy and fresh. I wish I could eat here once a week. If you have a chance to stop in, do it because it they have such awesome food.
